Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 medium potatoes, peeled and diced
  • 2 cups fresh spinach, chopped
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper.

  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and potatoes and cook until the potatoes are golden brown and cooked through, about 10 minutes.

  4. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.

  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle the shredded cheddar cheese evenly over the top.

  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is golden brown.

  7. Remove from the oven and let it cool for a few minutes before slicing and serving.
