Ingredients

  • 6 eggs
  • 1/2 cup of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1/2 cup of chopped onion
  • 1/2 cup of diced bell pepper
  • 1 cup of chopped spinach leaves
  • 1 cup of sliced mushrooms
  • 1/4 cup of shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F.

  2. Whisk the eggs, milk, salt, and black pepper in a bowl.

  3. Heat olive oil in an oven-safe skillet over medium-high heat.

  4. Add onion and bell pepper to the skillet and cook for 2-3 minutes.

  5. Stir in spinach and mushrooms and cook for another 2-3 minutes until the veggies are tender.

  6. Spread the veggies evenly in the skillet and pour the egg mixture over them.

  7. Sprinkle cheddar cheese on top and transfer the skillet to the oven.

  8. Bake for 10-12 minutes until the frittata is cooked through and the cheese is melted. Let it cool for 5 minutes before serving.
