How To Make Spicy Salmon & Lentils

Ingredients

  • 4 salmon fillets
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp tomato paste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and pepper.

  3. Rub the spice mixture onto both sides of the salmon fillets.

  4. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for 2-3 minutes until crispy. Flip the salmon and transfer the skillet to the preheated oven. Bake for 10-12 minutes until the salmon is cooked through.

  5. Meanwhile, rinse the lentils under cold water. In a separate pot, bring the vegetable broth to a boil and add the lentils. Reduce the heat, cover, and simmer for 20-25 minutes until the lentils are tender.

  6. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Cook for 5-6 minutes until vegetables are softened.

  7. Stir in the tomato paste and cooked lentils. Squeeze in the lemon juice and season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.

  8. Serve the spicy salmon fillets on a bed of lentils. Garnish with fresh parsley.
