How To Make Saffron and Seafood Paella Recipe

Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups arborio rice
  • 4 cups chicken broth
  • 1/2 tsp saffron threads
  • 1 lb mixed seafood (shrimp, scallops, mussels, clams)
  • 1 red bell pepper, sliced
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • Lemon wedges to garnish

Instructions

  1. Heat olive oil in a large paella pan over medium heat.

  2. Add chopped onion and minced garlic, sauté until softened.

  3. Add arborio rice and stir until coated with oil and fragrant.

  4. Add chicken broth and saffron threads, stir well and bring to a boil.

  5. Reduce heat and let simmer for 15 minutes.

  6. Add mixed seafood, sliced red bell pepper, and frozen peas.

  7. Cover and let cook for another 15 minutes or until the seafood is fully cooked.

  8. Season with salt and pepper to taste.

  9. Serve hot with lemon wedges on the side.
