Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 cucumbers, sliced into thin rounds
  • 2 cups samphire
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. Season the salmon fillets with salt and pepper.

  3. Place the cucumber slices on the grill and cook for about 2 minutes on each side, until slightly charred. Remove from heat and set aside.

  4. In a large bowl, toss the samphire with olive oil, lemon juice, salt, and pepper.

  5. Grill the salmon for about 4-5 minutes per side, or until cooked through.

  6. Divide the samphire onto plates and top with the grilled salmon and charred cucumbers. Drizzle with any remaining dressing from the samphire.

  7. Serve immediately.
