How To Make Prawn & Mango Salad

Ingredients

  • 500g prawns, peeled and deveined
  • 1 ripe mango, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped roasted peanuts
  • dressing:
  • 2 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 1 red chili, seeded and minced

Instructions

  1. In a large pot of boiling water, cook the prawns for 3-4 minutes until they turn pink. Drain and let them cool.

  2. In a large bowl, combine the prawns, mango, red onion, cilantro, mint leaves, and roasted peanuts.

  3. In a small bowl, whisk together the lime juice, fish sauce, honey, vegetable oil, and minced chili.

  4. Pour the dressing over the salad and toss gently to combine.

  5. Serve immediately and enjoy!
