How To Make Prawn & Mango Salad

Ingredients
- 500g prawns, peeled and deveined
- 1 ripe mango, diced
- 1 small red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped roasted peanuts
- dressing:
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp honey
- 1 tbsp vegetable oil
- 1 red chili, seeded and minced
Instructions

In a large pot of boiling water, cook the prawns for 3-4 minutes until they turn pink. Drain and let them cool.

In a large bowl, combine the prawns, mango, red onion, cilantro, mint leaves, and roasted peanuts.

In a small bowl, whisk together the lime juice, fish sauce, honey, vegetable oil, and minced chili.

Pour the dressing over the salad and toss gently to combine.
