Ingredients

  • 1 lb mixed seafood (shrimp, mussels, scallops, fish fillets)
  • 2 tbsp butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

  2. Add the mixed seafood to the pot and cook for 2-3 minutes, or until it starts to turn opaque.

  3. Pour in the chicken or vegetable broth and bring to a simmer. Cook for another 5 minutes.

  4. Stir in the heavy cream, diced tomatoes, dried basil, dried thyme, salt, and pepper. Simmer for 10 minutes to allow the flavors to meld together.

  5. Serve the creamy seafood stew hot, garnished with fresh parsley.
