Ingredients

  • 1 lb mixed seafood (shrimp, scallops, and fish)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 cups chicken or seafood broth
  • 1 can diced tomatoes
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lemon, cut into wedges
  • 1/4 cup chopped parsley

Instructions

  1. In a large pot, sauté onion and garlic in olive oil until fragrant.

  2. Add broth, tomatoes, carrots, celery, paprika, thyme, salt, and pepper and bring to a boil.

  3. Reduce heat and simmer for 20 minutes, until vegetables are tender.

  4. Add seafood and cook for an additional 10-15 minutes, until seafood is cooked through.

  5. Serve hot with a wedge of lemon and chopped parsley.
