Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 fennel bulb, thinly sliced
  • 1 can (28 oz) diced tomatoes
  • 2 cups seafood stock
  • 1 cup white wine
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1 lb clams
  • 1 lb mussels
  • 1 lb shrimp, peeled and deveined
  • 1 lb white fish fillets, cut into chunks
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and fennel. Cook until the vegetables are softened, about 5 minutes.

  2. Add the diced tomatoes, seafood stock, white wine, dried oregano, dried basil, and red pepper flakes. Bring to a simmer and let cook for 20 minutes.

  3. Add the clams, mussels, shrimp, and white fish to the pot. Cook for another 10 minutes, or until the seafood is cooked through and the clams and mussels have opened.

  4. Season with salt and pepper to taste. Serve the cioppino hot, garnished with fresh parsley.
