How To Make Crab Noodle Salad

Ingredients
- 8 oz rice noodles
- 1 lb fresh crab meat
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup peanuts, chopped
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp sriracha sauce
- 1 tbsp honey
- 1 clove garlic, minced
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large bowl, combine the crab meat, cucumber, carrot, bell pepper, cilantro, and mint leaves.

In a small bowl, whisk together the fish sauce, lime juice, soy sauce, sriracha sauce, honey, and garlic.

Pour the dressing over the crab and vegetable mixture. Toss until well combined.

Add the cooked rice noodles and toss gently to combine.

Sprinkle with chopped peanuts and serve.
