  • 200g samphire
  • 200g fresh crab meat
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the samphire under cold water to remove any sand or grit. Blanch in boiling water for 2 minutes, then drain and refresh in ice-cold water.

  2. In a large bowl, combine the samphire, crab meat, lemon juice, and olive oil. Season with salt and pepper and gently toss to combine.

  3. Serve the salad chilled and enjoy!
