How To Make Clams with Sherry & Serrano Ham

Ingredients

  • 2 lbs fresh clams
  • 4 slices Serrano ham, diced
  • 1/4 cup dry sherry
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the clams under cold water to remove any dirt or sand. Discard any clams with broken shells or that do not close when tapped.

  2. In a large skillet, heat the olive oil over medium heat. Add the diced Serrano ham and cook until crispy, about 3 minutes.

  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.

  4. Increase the heat to high and add the clams to the skillet. Pour in the dry sherry and cover the skillet. Cook for 5-7 minutes or until the clams have opened.

  5. Remove the skillet from the heat and discard any clams that have not opened.

  6. Sprinkle the chopped parsley over the clams and season with salt and pepper to taste.

  7. Serve the clams with crusty bread or over linguine pasta for a more substantial meal.
