Instructions

  1. In a shallow dish, combine cornmeal, Cajun seasoning, paprika, garlic powder, salt, and black pepper.

  2. Dredge catfish fillets in the cornmeal mixture, pressing lightly to adhere.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Cook catfish fillets for 4-5 minutes on each side, until golden brown and cooked through.

  5. Remove catfish from skillet and let drain on a paper towel-lined plate.

  6. Serve hot with your favorite dipping sauce.
