Ingredients

  • 2 tbsp butter
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 cups cooked chicken, shredded
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. In a large skillet, melt butter over medium heat. Add onion, bell pepper, mushrooms, and garlic. Cook until vegetables are tender, about 5 minutes.

  2. Sprinkle flour over the vegetables and stir until well coated. Cook for 1 minute.

  3. Gradually whisk in chicken broth and milk. Bring to a boil, then reduce heat and simmer until sauce thickens, about 5 minutes.

  4. Stir in dried thyme, paprika, cooked chicken, and frozen peas. Cook for an additional 5 minutes, or until heated through. Season with salt and pepper to taste.

  5. Serve hot over cooked rice or noodles.
