Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup textured vegetable protein (TVP)
- 1 cup water
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Hamburger buns, for serving
Instructions

In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until vegetables are softened, about 5 minutes.

In a small bowl, rehydrate the TVP with water. Let it sit for 5 minutes, then drain any excess water.

Add the rehydrated TVP, diced tomatoes, tomato paste, soy sauce, brown sugar, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.

Reduce heat to low and simmer for 15-20 minutes, until the mixture has thickened.

Toast the hamburger buns if desired. Spoon the sloppy joe mixture onto the buns and serve hot.
