Ingredients

  • 1 cup quinoa
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp dried dill
  • 1 cup cherry tomatoes, halved
  • Salt and pepper, to taste
  • Fresh dill, for garnish

Instructions

  1. Rinse the quinoa and rice in a fine-mesh sieve until the water runs clear.

  2. In a medium-sized pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

  3. Add the quinoa, rice, vegetable broth, cumin, turmeric, and dried dill to the pot. Stir well to combine.

  4. Bring the mixture to a boil, then reduce heat to low and cover the pot. Cook for 20 minutes or until the liquid is absorbed and the quinoa and rice are tender.

  5. While the pilau is cooking, preheat the oven to 400°F (200°C).

  6. Place the cherry tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper. Roast in the oven for 10-12 minutes or until tomatoes are soft and slightly charred.

  7. Once the pilau is cooked, fluff it with a fork and stir in the roasted tomatoes.

  8. Serve the pilau hot, garnished with fresh dill.
