Ingredients

  • 4 medium-sized potatoes, peeled and cubed

  • 1/4 cup grated Parmesan cheese
  • 2 cups lettuce, chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Boil the cubed potatoes in a pot of salted water until fork-tender, about 10 minutes. Drain and let cool slightly.

  2. In a large bowl, combine the Caesar dressing and Parmesan cheese. Mix well.

  3. Add the cooked potatoes to the bowl and gently toss until they are evenly coated with the dressing.

  4. Add the lettuce, cherry tomatoes, and parsley to the bowl. Season with salt and pepper.
