How To Make Leek, Bacon & Potato Soup

- 4 slices of bacon, diced
- 2 leeks, white and light green parts only, sliced
- 2 potatoes, peeled and diced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Chopped fresh chives for garnish

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

Add the leeks to the pot and cook until softened, about 5 minutes.

Add the potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be careful when blending hot liquids.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

Heat the soup over low heat until warmed through.
