Ingredients

  • 4 red mullet fillets
  • 8 slices of bacon
  • 2 leeks, sliced
  • 1 grapefruit, segmented
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Season the red mullet with salt and pepper, then wrap each fillet with 2 slices of bacon.

  3. Heat some olive oil in a pan over medium heat. Sauté the leeks until they are soft and lightly browned.

  4. Place the bacon-wrapped mullet fillets on a baking tray lined with parchment paper. Bake in the preheated oven for 15-18 minutes, or until the bacon is crispy and the fish is cooked through.

  5. In the meantime, remove the grapefruit segments from their membranes.

  6. Once the fish is cooked, divide the sautéed leeks and grapefruit segments among the plates. Place a bacon-wrapped mullet fillet on top of each portion.

  7. Serve the baked red mullet with bacon, leeks & grapefruit immediately.
