Ingredients

  • 2 cans of tuna, drained
  • 1 can of butterbeans, rinsed and drained
  • 1 red onion, thinly sliced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of black olives, sliced
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine tuna, butterbeans, red onion, red bell pepper, cucumber, cherry tomatoes, black olives, and parsley.

  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
