Ingredients

  • 2 cups chopped kale
  • 1 cup diced tomatoes
  • 1/2 cup finely chopped parsley
  • 1/4 cup chopped mint leaves
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large mixing bowl, combine the chopped kale, diced tomatoes, parsley, mint leaves, red onion, and cucumber.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

  3. Pour the dressing over the kale mixture and toss well to coat.

  4. Let the kale tabbouleh sit for 10 minutes to allow the flavors to meld together.

  5. Serve chilled and enjoy!
