Ingredients

  • 8 cups fresh spinach leaves
  • 2 boneless, skinless chicken breasts
  • 1 avocado, sliced
  • 4 oz goat cheese, crumbled
  • 1/4 cup sliced red onion
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Grill or pan-fry until cooked through. Let cool, then slice into thin strips.

  2. In a large mixing bowl, combine the spinach, chicken, avocado, goat cheese, red onion, dried cranberries, and walnuts.

  3. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.

  4. Drizzle the dressing over the salad, then toss to combine. Serve immediately.
