  • 12 fresh sea scallops, shucked and cleaned
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh chives
  • Sea salt and freshly ground black pepper, to taste
  • Arugula leaves, for serving
  • Lemon wedges, for serving

Instructions

  1. Place the scallops in the freezer for 15 minutes to firm them up slightly.

  2. Using a sharp knife, thinly slice each scallop horizontally into rounds.

  3. Arrange the scallop slices on a serving platter.

  4. In a small bowl, whisk together the olive oil, lemon juice, lime juice, dill, and chives.

  5. Drizzle the dressing over the scallops.

  6. Season with sea salt and black pepper.

  7. Allow the scallops to marinate in the dressing for 5 minutes.

  8. Garnish with arugula leaves and lemon wedges.

  9. Serve immediately.
