How To Make Russian Potato Salad

Ingredients
- 4 medium potatoes
- 2 carrots
- 1 cup frozen peas
- 1/2 cup chopped pickles
- 1/4 cup chopped onions
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- Salt and pepper, to taste
Instructions

Peel and boil potatoes and carrots until tender. Allow them to cool.

Dice the boiled potatoes and carrots into small cubes and place them in a large mixing bowl.

Add the frozen peas, chopped pickles, onions, dill, and parsley to the bowl.

In a separate bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.

Pour the dressing over the vegetables and toss until well-coated.

Refrigerate for at least 1 hour before serving.

Garnish with additional fresh dill and parsley before serving.
