Ingredients
- 6 slices of bacon, diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large skillet, cook the bacon over medium heat until crispy. Remove bacon from skillet and set aside, leaving the bacon grease in the skillet.

In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant.

Add the Arborio rice to the skillet and stir until coated with the bacon grease.

Gradually add the broth, about 1 cup at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 20-25 minutes.

Stir in the cooked bacon, grated Parmesan cheese, and butter. Season with salt and pepper to taste.

Serve the bacon risotto hot, garnished with fresh chopped parsley.
