How To Make Pearl Couscous Salad Recipe

Ingredients
- 1 cup pearl couscous
- 1 ½ cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 1 bell pepper, diced
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh mint
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Add the pearl couscous and cook according to package instructions. Once cooked, drain and let it cool.

In a large bowl, combine the cooked pearl couscous, cherry tomatoes, cucumber, red onion, bell pepper, parsley, and mint.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
