Ingredients

  • 1 cup pearl couscous
  • 1 ½ cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 1 bell pepper, diced
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the pearl couscous and cook according to package instructions. Once cooked, drain and let it cool.

  2. In a large bowl, combine the cooked pearl couscous, cherry tomatoes, cucumber, red onion, bell pepper, parsley, and mint.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve chilled and enjoy!
