How To Make Sambar

Ingredients
- 1 cup toor dal (split pigeon peas)
- 1 onion, chopped
- 2 tomatoes, diced
- 2 carrots, chopped
- 1 potato, diced
- 1 drumstick, cut into pieces
- 1/4 cup tamarind pulp
- 2 tablespoons sambar powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 dried red chilies
- A few curry leaves
- Fresh coriander leaves for garnish
Instructions

Rinse the toor dal under cold water and pressure cook with 2 cups of water until soft and mushy.

In a large pot, heat oil and add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Saute until the mustard seeds start to splutter.

Add onion and saute until translucent. Then, add tomatoes and cook until they turn soft.

Add the carrots, potato, and drumstick to the pot. Mix well.

Add sambar powder, turmeric powder, and salt. Mix again.

Add 3 cups of water and bring to a boil. Reduce the heat and simmer for 15-20 minutes or until the vegetables are cooked.

Add tamarind pulp and cooked toor dal to the pot. Mix well and simmer for another 10 minutes.

Garnish with fresh coriander leaves before serving.
