How To Make Middle Eastern Carrot Salad

Ingredients
- 4 large carrots, grated
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- 1/2 cup chopped walnuts
- 1/4 cup golden raisins
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- salt and pepper to taste
Instructions

In a large mixing bowl, combine grated carrots, parsley, mint, cilantro, walnuts, and raisins.

In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper.

Pour the dressing over the carrot mixture and toss well to combine.
