  • 4 large carrots, grated
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped walnuts
  • 1/4 cup golden raisins
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine grated carrots, parsley, mint, cilantro, walnuts, and raisins.

  2. In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper.

  3. Pour the dressing over the carrot mixture and toss well to combine.

  4. Let the salad sit for 10 minutes to allow the flavors to meld together.
