How To Make Layered Salad with Parmesan Croutons

Ingredients
- 6 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh dill
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- 4 slices of day-old bread
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
Instructions

In a large salad bowl, layer the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, black olives, and fresh dill.

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.

Preheat the oven to 375°F (190°C).

Cut the day-old bread into cubes and place them in a mixing bowl.

Melt the butter and pour it over the bread cubes. Toss to evenly coat.

Sprinkle the grated Parmesan cheese over the bread cubes and toss again to coat.

Spread the bread cubes out on a baking sheet and bake for 10 minutes or until golden and crispy.

Remove the croutons from the oven and let them cool slightly.

Sprinkle the Parmesan croutons over the layered salad and serve immediately.
