How To Make Classic Chicken Caesar Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 head of romaine lettuce, washed and chopped
- 1 cup homemade croutons
- 1/2 cup grated Parmesan cheese
- For the Caesar dressing:
- 1/4 cup mayonnaise
- 2 tbsp grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste

Preheat the grill or stove-top grill pan over medium-high heat.

Season the chicken breasts with olive oil, salt, and pepper. Grill for 6-8 minutes per side, or until cooked through. Let cool slightly, then slice into strips.

In a large bowl, combine the romaine lettuce, chicken, croutons, and grated Parmesan cheese.

In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, garlic, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

Divide the salad among 4 plates and serve immediately.
