- 2 cans (15.5 oz) kidney beans, rinsed and drained
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste

In a large bowl, combine the kidney beans, bell pepper, cucumber, red onion, cherry tomatoes, and parsley.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
