  • 2 cans (15.5 oz) kidney beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the kidney beans, bell pepper, cucumber, red onion, cherry tomatoes, and parsley.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat everything evenly.

  4. Serve immediately or refrigerate for a few hours to let the flavors mingle.
