How To Make Jerk-style Chicken Pilaf

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rub the chicken breasts with jerk seasoning, ensuring they are well coated. Let them marinate for 10 minutes.

  2. Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for about 5-6 minutes on each side until browned and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add onion, garlic, and red bell pepper. Sauté until the vegetables are softened.

  4. Add rice, chicken broth, and coconut milk to the skillet. Stir well and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and liquid is absorbed.

  5. Slice the cooked chicken breasts into strips and add them back to the skillet. Stir gently to combine with the rice mixture. Season with salt and pepper to taste.

  6. Serve the Jerk-style Chicken Pilaf hot, garnished with fresh cilantro.
