How To Make Jerk-style Chicken Pilaf
Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp jerk seasoning
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 cup long grain rice
- 2 cups chicken broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
-
Rub the chicken breasts with jerk seasoning, ensuring they are well coated. Let them marinate for 10 minutes.
-
Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for about 5-6 minutes on each side until browned and cooked through. Remove from the skillet and set aside.
-
In the same skillet, add onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
-
Add rice, chicken broth, and coconut milk to the skillet. Stir well and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and liquid is absorbed.
-
Slice the cooked chicken breasts into strips and add them back to the skillet. Stir gently to combine with the rice mixture. Season with salt and pepper to taste.
-
Serve the Jerk-style Chicken Pilaf hot, garnished with fresh cilantro.
