How To Make Green Goddess Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • For the Green Goddess Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 1/4 cup fresh chives
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-8 minutes per side or until cooked through. Remove from the grill and let rest for a few minutes. Slice the chicken into thin strips.

  2. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, green onions, parsley, and basil.

  3. In a blender or food processor, combine all the ingredients for the green goddess dressing. Blend until smooth and creamy.

  4. Pour the dressing over the salad and toss to coat.

  5. Divide the salad among four plates and top with the sliced chicken.

  6. Serve and enjoy!
