Ingredients

  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • 2 cloves garlic
  • 1/4 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, combine basil, parsley, mint, garlic, Greek yogurt, mayonnaise, lemon juice, and apple cider vinegar. Blend until smooth and creamy.

  2. In a large salad bowl, combine mixed salad greens, cucumber, avocado, and cherry tomatoes.

  3. Drizzle the green goddess dressing over the salad and toss to coat.

  4. Season with salt and pepper to taste.
