Classic chicken salad is given a flavorful twist with the addition of green goddess dressing, with tangy and savory flavors of anchovies and lemon!

Ingredients

  • 2anchovies,oil packed
  • 1clovesmall garlic
  • ½cupflat leaf parsley leaves,packed
  • ¼cupbasil leaves,packed
  • ¼cupdill,coarsely chopped
  • 1tbsporegano leaves
  • ¾cupmayonnaise
  • tbspfresh lemon juice
  • 2tbspchives,snipped
  • kosher salt and freshly ground pepper
  • 1ciabatta bread loaf
  • 1rotisserie chicken
  • 8piquillo peppers
  • 3celery ribs,inner, with leaves
  • ½cupkalamata olives,pitted

Instructions

  1. In a food processor, pulse the anchovies, garlic, parsley, basil, dill, and oregano until coarsely chopped.

  2. Add the mayonnaise and lemon juice and process until smooth. Fold in the chives; season with salt and pepper.

  3. In a large bowl, toss the ciabatta with the chicken, piquillo peppers, celery, and olives. Add the dressing and toss to coat.

  4. Season with salt and pepper and serve.
