How To Make Favourite Pasta Salad

Ingredients

  • 8 oz pasta (penne, fusilli, or rotini)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, parsley, and basil.

  3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper. Pour over the pasta mixture and toss until well coated.

  4. Refrigerate for at least 1 hour to allow the flavors to meld together.

  5. Serve chilled and enjoy!
