How To Make Crunchy Chicken Salad

- 2 boneless, skinless chicken breasts
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- For the dressing:
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste

Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and pepper. Bake for 15 minutes or until cooked through. Let cool, then slice into strips.

In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, almonds, dried cranberries, and feta cheese.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.

Add the sliced chicken to the salad bowl and drizzle with the dressing. Toss everything together until well-coated.
