How To Make Chicken & Pistachio Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup shelled pistachios
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C). Place the chicken breasts on a baking sheet and season with salt and pepper. Bake for 20-25 minutes, or until cooked through. Let cool, then slice into bite-sized pieces.

In a dry skillet, toast the pistachios over medium heat for about 5 minutes, until lightly browned. Let cool, then roughly chop.

In a large bowl, combine the salad greens, cherry tomatoes, red onion, feta cheese, and chopped pistachios. Add the sliced chicken.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to coat evenly.

Sprinkle the chopped parsley over the salad before serving.
