Ingredients

  • 2 ripe avocados, sliced
  • 4 cups mixed leafy greens
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the sliced avocados, mixed greens, red onion, cherry tomatoes, and cilantro.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and gently toss to combine.

  4. Serve chilled and enjoy!
