  • 2 chicory heads, leaves separated
  • 4 mandarin oranges, peeled and segmented
  • 1 burrata cheese, torn into pieces
  • 1 cup walnuts, toasted
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the carrots, chicory leaves, mandarins, burrata, and walnuts.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.
