- 2 ripe pears, sliced
- 2 heads of chicory, separated into leaves
- 100g blue cheese, crumbled
- 50g walnuts, roughly chopped
- 1 shallot, thinly sliced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
Instructions

In a large bowl, combine the sliced pears, chicory leaves, blue cheese, walnuts, and shallot.

In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

Pour the dressing over the salad and toss to combine.
