Ingredients

  • 2 ripe pears, sliced
  • 2 heads of chicory, separated into leaves
  • 100g blue cheese, crumbled
  • 50g walnuts, roughly chopped
  • 1 shallot, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced pears, chicory leaves, blue cheese, walnuts, and shallot.

  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately.
