  • 2 cups of cooked chicken breasts, shredded
  • 1/2 cup of mayonnaise
  • 1/4 cup of Greek yogurt
  • 1/4 cup of diced celery
  • 1/4 cup of diced red onion
  • 1/4 cup of diced apple
  • 1/4 cup of chopped walnuts
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions

  1. In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt, celery, red onion, apple, walnuts, lemon juice, dijon mustard, salt, and pepper. Mix until well combined.

  2. Place a lettuce leaf on each plate and spoon the chicken salad onto the lettuce leaves.

  3. Serve immediately and enjoy!
