For Salad:
- 15oztunacanned in brine or olive oil
- 14ozchickpeasdrained
- 2largeavocadospeeled and pitted
- 2largevine ripened tomatoescut into wedges
- 1largecucumberhalved lengthways and sliced
- ½red onionsliced thinly
For Dressing:
- ¼cupolive oil
- 2tbsplemon juicefreshly squeezed
- 1tbspfresh parsleychopped (plus extra to serve)
