Hearty and filling, this tuna salad only needs 5 main ingredients. The avocado, chickpeas, tomatoes, and cucumber make this dish tastier and more vibrant.

For Salad:

  • 15oztunacanned in brine or olive oil
  • 14ozchickpeasdrained
  • 2largeavocadospeeled and pitted
  • 2largevine ripened tomatoescut into wedges
  • 1largecucumberhalved lengthways and sliced
  • ½red onionsliced thinly

For Dressing:

  • ¼cupolive oil
  • 2tbsplemon juicefreshly squeezed
  • 1tbspfresh parsleychopped (plus extra to serve)
  • 1tspminced garlic
  • ¼tspsalt


  1. Whisk together dressing ingredients in jug or jar.

  2. Mix together all of the salad ingredients in a large bowl. Toss with dressing.

  3. Season with pepper and extra salt if desired.
