How To Make Roast Spiced Duck with Plums

Ingredients
- 1 whole duck (about 4-5 lbs)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 4 plums, pitted and sliced
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
Instructions

Preheat the oven to 350°F (175°C).

In a small bowl, mix together salt, black pepper, paprika, ground coriander, and ground cinnamon. Set aside.

Pat dry the duck with paper towels.

Rub the spice mixture all over the duck, inside and out.

Place the duck on a rack in a roasting pan, breast-side up.

Roast the duck in the oven for about 2 hours, or until the skin is golden brown and crispy.

While the duck is roasting, prepare the spiced plum sauce. In a saucepan, combine sliced plums, honey, soy sauce, and rice vinegar. Cook over medium heat until the plums are soft and the sauce thickens slightly.

Once the duck is cooked, remove it from the oven and let it rest for 10 minutes before carving.

Serve the sliced duck with the spiced plum sauce on the side.
