Ingredients
- 4 bone-in chicken thighs
- 4 medium potatoes, quartered
- 4 medium carrots, peeled and cut into chunks
- 1 onion, sliced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried rosemary
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh parsley for garnish

Preheat oven to 425°F (220°C).

In a large bowl, toss the chicken thighs, potatoes, carrots, onion, garlic, olive oil, rosemary, thyme, paprika, salt, and pepper until well coated.
