  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 lemon, zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash and dry the potatoes, then cut them into wedges.

  3. In a large bowl, combine the olive oil, rosemary, lemon zest, salt, and pepper. Add the potato wedges and toss until well coated.

  4. Arrange the potato wedges in a single layer on a baking sheet.
