How To Make Easy Rib Eye Roast Recipe

- 1 (3-pound) boneless rib eye roast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper, to taste
Instructions

Preheat the oven to 350°F (175°C).

In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, and chopped thyme.

Rub the mixture evenly all over the rib eye roast.

Season the roast generously with salt and black pepper.

Place the roast on a rack in a roasting pan, fat side up.

Roast the meat in the preheated oven for about 15 minutes per pound, or until a meat thermometer inserted into the thickest part of the roast reads 135°F (57°C) for medium-rare.
