How To Make Herb Crusted Rib Eye Roast

Beef coated in breadcrumbs and herbs then tossed in an irresistible combination of sour cream and horseradish make this rib eye roast a flavorful dish.

Preparation: 5 minutes
Cooking: 50 minutes
Rest Time: 15 minutes
Total: 1 hour 10 minutes



  • lbsbeef eye round roast,all fat trimmed off
  • 2tbspsour cream,fat free
  • 3tsphorseradish,prepared
  • kosher salt and fresh pepper
  • ½cupwhole wheat seasoned bread crumbs
  • 1tbspherbs de provence,rosemary, thyme, marjoram, and savory
  • 1garlic clove,crushed
  • 2tbspolive oil


  1. Preheat oven to 400 degrees F.

  2. In a small bowl, combine sour cream, salt, pepper, and horseradish.

  3. In another bowl, combine breadcrumbs, herbs, garlic, and oil.

  4. Season meat with salt and pepper. Sear roast in a large skillet on high heat for about 10 minutes in total on all sides.

  5. Place in roasting pan and cover with sour cream and breadcrumbs on top of the roast.

  6. Place in the oven and cook until the thermometer reads 140 degrees F for about 35 to 40 minutes.

  7. Remove and let it rest for 15 minutes before slicing.
