How To Make Brown Butter Roasties with Pork Crumbs

Ingredients
- 1.5 kg potatoes, peeled and cut into small cubes
- 4 tbsp unsalted butter
- 150g pork rinds, crushed into crumbs
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Preheat your oven to 200°C (400°F).

Place the potatoes in a large pot of salted boiling water. Cook for 8-10 minutes until slightly tender. Drain and set aside.

In a large non-stick skillet, melt the butter over medium heat. Cook until the butter turns a golden brown color and has a nutty aroma, about 5 minutes.

Add the potatoes to the skillet and toss to coat them in the brown butter. Season with salt and pepper.

Transfer the potatoes to a baking sheet and spread them out in a single layer. Roast in the preheated oven for 35-40 minutes, flipping halfway through, until the potatoes are golden and crispy.

Meanwhile, in a separate skillet, heat 1 tablespoon of the brown butter over medium heat. Add the pork crumbs and cook until crispy and golden brown, about 5 minutes. Remove from heat and set aside.

Once the roasties are ready, transfer them to a serving dish and sprinkle the crispy pork crumbs on top. Garnish with chopped parsley.
