Ingredients
- 1 cup Arborio rice
- 4 cups vegetable or chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup mushrooms, sliced
- 1 cup butternut squash, diced
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they become translucent.

Add the mushrooms and butternut squash, and cook for another 5 minutes, until they start to soften.

Add the Arborio rice and stir well to coat it with the oil. Cook for 2 minutes, stirring constantly.

Slowly add the broth, 1/2 cup at a time, stirring continuously. Allow the rice to absorb the broth before adding the next 1/2 cup.

Continue this process until all the broth has been absorbed and the rice is cooked al dente, this should take about 25-30 minutes.

Stir in the spinach and Parmesan cheese until they are well incorporated. Cook for another 2 minutes, until the spinach wilts.

Season with salt and pepper to taste.
